Lean Beef Rice Bowl

A simple, high-protein meal that's perfect for meal prep, packed lunches or an easy weeknight dinner.

Ingredients
150 g extra lean beef mince
100 g cooked brown or jasmine rice
1 cup broccoli florets
1 medium carrot, julienned or grated
1 clove garlic, crushed
1 tsp fresh ginger, grated
1 tbsp reduced-salt soy sauce
1 tsp sesame oil (optional)
Olive oil spray
Spring onion and sesame seeds, to garnish (optional)
Method
Heat a non-stick frying pan over medium-high heat and lightly spray with olive oil.
Add the lean beef mince and cook for 5–6 minutes, breaking it apart until browned.
Stir through the garlic and ginger and cook for another minute until fragrant.
Add the broccoli and carrot, cooking for 3–4 minutes until the vegetables are tender but still slightly crisp.
Pour over the soy sauce (and sesame oil if using) and stir everything together.
Heat the cooked rice according to the packet instructions.
Divide the rice between a bowl or meal prep container and top with the beef and vegetable mixture.
Garnish with sliced spring onion and sesame seeds if desired.
